White Chocolate Chip Cranberry Brown Sugar Cookies

photo(1).JPG

I love Christmas. I love Christmas Music. I love Christmas cookies and honestly, nothing tastes more like Christmas than these babies.

This recipe yields two dozen cookies, but I make Josue sized snacks, so I only got eighteen out of this batch.

I started with a brown sugar cookie dough. It is absolutely delicious and just a little bit richer than a normal sugar cookie. Again, I make just about everything with whole wheat flour, but all-purpose flour is just as good!

Cranberries have even snuck into my household holiday decorations. Along with tinsel, tea light candles and mason jars!

Brown Sugar Cookie Dough:

Preheat oven to 375 degrees (F).

  • 1 1/2 sticks salted butter
  • 1 1/4 cups dark brown sugar
  • 1 large egg
  • 2 cups whole wheat flour
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon

Mix it all together in a large bowl! I usually mix wet ingredients and dry ingredients separately first,  but I was in a hurry cause I really wanted cookies and they came out great!

For those of you who enjoy a simpler cookie, you can just make these! This dough does not need anything more, it is unbelievably delicious as is. I know because I helped myself to a free sample before adding the last two ingredients!

For the rest of you, its time to fold in your cranberries and white chocolate chips.

Keep in mind,  I LOVE cranberries and have yet to meet a white chocolate chip I didn't like... so this cranberry/white chocolate to dough ratio might be a little much for the average muncher. 1/2 cup of cranberries and 1/3 cup of chips might be a safer place to start unless you're like me, in which case, GO CRAZY.

  • 1/2 cups white chocolate chips
  • 3/4 cups dried cranberries

Alright, you know how to make cookies. Pop em onto the cookie sheet, stick em in the oven for about 12 minutes or until golden brown and serve immediately with ice cold milk.
