Chorizo & Bean Mexican Soup

I started Weight Watchers last week and after 5 days of apples and Cool Whip, I finally decided to get in the kitchen and see what yumminess I can could come up with. This was my first attempt and, not to brag, but I think I've found my calling! Also, it was the easiest thing I've ever made. 

This recipe makes 6 servings, 6ppv each. I enjoyed mine with a 2.5 oz french baguette (5ppv).

Chorizo & Bean Mexican Soup

6 oz spicy mexican chorizo

2 tsp garlic, minced

1 bell pepper, diced

1 onion, diced

2 fresh jalapeños, diced

6 cups of low sodium chicken broth

2 medium tomatoes, diced

11 oz white corn kernels

11 oz pink beans

Cook chorizo, onion, garlic, bell pepper and jalapeños in skillet over moderate heat, stirring until vegetables are softened. Stir in broth, tomatoes, beans and corn. Cover and simmer for 15 minutes. Enjoy!
